The need, or better empty fridge, is a mother of invention. I create my best recipies when I have almost nothing at hand. It was how I cooked for the first time this pasta. Spaghetti with olive oil and spinach is a very simple and fast to prepare dish. You can add chilli if you like spicy food, or not.

Serves: 2
Ingredients:
200-250 g of spaghetti
200 g of fresh spinach
1 teaspoon chilli powder
30 g of freshly grated Parmesan cheese
4 tablespoons olive oil
Served with: white dry wine
Preparation method:
While the pasta is cooking, start to prepare a sauce. On a large frying pan add 1 tablespoon of olive oil and spinach and simmer covered until is wilted. You can add some water if spinach start to stick to the frying pan. When spinach is cooked put it into a dish. Heat the oil, chilli and garlic in the same pan for 1 minute until garlic is brown. Then add spinach. Take the pan off the heat, add drained pasta, sauce and swiftly toss everything to mix. At the end sprinkle with freshly grated Parmesan cheese. And it’s done! Usually it takes me 10 minutes to prepare this dish.
