Radicchio – a red inspiration

Radicchio is simply a variety of chicory. In Italy you can find it in a round or an elongated shape. It can be eaten both like a salad and served heated: baked or fried. The recipe below is quick and very easy to prepare. But it’s not a typical Italian dish, you should treat it more as an Italian inspiration.

Salsiccia (raw Italian sausage) with radicchio

Serves:  4

Ingredients:

500 g of raw Italian sausage

400 g of radicchio

2 tablespoons olive oil (not extra-virgine)

½ teaspoon chilli powder

salt to taste

a rosemary branch as a decoration

Served with: red dry wine (can be Merlot type) or beer

Preparation method:

Start from chopping radicchio into small pieces. Then squeeze meat from a sausage skin to a big pan and fry it for about 2 min. Add chilly, then vegetable, mix and keep frying for about 6-8 minutes until radicchio is ready. You can serve with fresh bread or baked potatoes.
