Green asparagus is one of my favourits vegetables, and that’s why when it comes its season I eat it as much as I can. Having a strong flavor it tastes the best accompanied with simply fried eggs. Spilled yolk perfectly wrap asparagus forming a delicate creamy sauce. The secret of this dish is a good quality egg, from organic farm will be the best.
Asparagus with fried eggs
1 bunch asparagus
1 tablespoon of unsalted butter
2-3 tablespoons of freshly grated Parmesan cheese
Salt to taste
Served with: white dry wine like Sauvignon Blanc or Gewürztraminer.
Remove the bottom ends of each asparagus (1/3 of length) and wash them well. Then cook by steaming water for about 5-7 minutes so they remain tender but al dente. On a large fry pan melt butter and prepare fried eggs – be careful not to spill yolks. When vegetables are ready put them on plates and transfer eggs on the top of asparagus. At the end season with salt and grate Parmesan cheese.
